Speaker: Corn has always been a part of the American harvest menu, Corn Pudding is extra special.
Preheat the oven to 325 F. In a food processor add one small onion and one bag of frozen corn Pulse until the corn is broken but not pureed, scraping the side of the bowl as necessary. Next add two cups of milk, two eggs and process just until blended. Add 8.5 ounces or one box of muffin mix and a half teaspoon of salt. Then pour the mixture into a greased 11 3/4 x 7 1/2 inch baking dish. Bake in a 325 F oven 45-50 minutes, until outside crust is golden brown. To add some extra flavor, sprinkle the top with cheese and garnish with fresh cut scallions.
