Mike: Hi! I am Mike.
Steve: And I am Steve.
Mike: If you wait for the holidays to have eggnog out of the carton, we got a treat for you.
Steve: Every day is a holiday when you know to make eggnog from scratch. We are going to start by whisking sugar into our egg yolks. We are doing this in a heavy saucepan because we are going to a cook version just to ensure that we kill all bacteria that might be in the eggs.
Mike: At this point we want to add our cream and add all of our milk.
Steve: Once all of that is incorporated, we are going to turn on on low heat and cook to 175. So now we are going to strain the liquid --
Mike: Into a bowl over an ice bag and we want to chill this completely for three hours in the refrigerator.
Steve: So to our chilled egg mixture, we are going to add the rum. We are going to stir that in, so it's all nice and incorporated.
Mike: And now we are going to add in two cups of whipped cream.
Steve: So to give it a nice rubbery smooth texture, I finished it off with the whisk. A nice touch to a beautiful glass of eggnog, and some grated nutmeg.
