Pumpkin Filled Wonton Dumplings are fun and easy to make. They're a surprise to your taste buds too! Things you'll need:
1 15 oz. can pumpkin (not pumpkin pie mix)
1 yam - cooked, peeled and mashed
2 tblsp. granulated sugar
1 tsp. pumpkin pie spice
24 wonton wrappers, square or round
Difficulty: Moderately Easy
Combine all ingredients except wonton wrappers. Mix well. This is a good time
to taste the filling. You might want to add more spice or sugar.
Lay out wonton wrappers, six at a time. They dry out quickly, so keep the other
wontons covered until you're ready to use them. Place approximately 1
teaspoon of filling off-center of wonton. Moisten the edges of wontons with
water. Fold one end over the filling to form a triangle. Seal. Dab with more
water if necessary. Continue until all the filling is used.
Place wonton dumplings into boiling water for about 1 minute. Don't put too
many dumplings into the water at one time, they need space. The dumplings
will rise to the top when they are done. Remove dumplings from water with a
slotted spoon and transfer to a serving plate. Allow water to come to a boil
again and continue with remaining dumplings.
Serve with your favorite cream cheese sauce sprinkled with grated nutmeg.
Makes about 24 wonton dumplings, unless you eat a lot of the filling while
you're making them. I know this from experience!
