Basil marinade is great for chicken and seafood. It is very flavorful. Especially good for grilled chicken breasts.

There is nothing like basil marinade. It brings such intense flavor to your food.

It is great with seafood or chicken.

There aren't too many ingredients and it is pretty healthy.

You will need to get out your blender for this recipe.

Here are the ingredients you will need:

1/3 extra virgin olive oil

1/3 cup fresh lemon juice - It works well to use the bottled variety too.

1/3 cup boiling water

3 cloves garlic, peeled

1 large bunch fresh basil, stemmed - A bunch is equal to 20 - 30 leaves.

1 teaspoon salt

1 teaspoon ground black pepper - Preferably freshly ground, but tasty either way.

Add all of the ingredients to the jar of a blender and process it to a smooth paste. Store, tightly covered in the refrigerator, for up to 3 days.

You will get about a cup. That is enough to marinate 3 pounds of poultry or seafood.

If you plan on making chicken, you will need to marinate it for 2 hours. If you are going to be using the marinade for seafood, marinate it for just one hour.

It is a very bright green. It may look a bit different, but that is normal for this marinade.

I would like to give credit to Steven Raichlen for this recipe. He is the author of The Barbecue! Bible, where I originally found this recipe. He is also the author of several barbecue cook books.

This recipe for basil marinade is just too good not to share.

One taste of this and you'll be looking forward to fresh basil season every year. I know I do.
