2 Delightful and Delicious Easy Apple Dessert Recipes

Apples are no longer just an Autumn trend. There are dozens of apple varieties that can be used in my recipes that will delight all kinds of palates, and the best thing is, they are available now at the market.

One of the things I miss about living up north is going to my favorite apple orchard when I was younger. I would pick up a paper bag full of golden delicious apples and fresh honey comb to snack on all the way back home. My tradition may be back in Ohio, but the recipes are still alive.

Ingredients

  • 2 tart apples, peeled and sliced
  • 1 cup chopped walnuts
  • 1/2 cup dried apricots, halved
  • 2 eggs
  • 3/4 cup sugar
  • 4 Tbsp Cake flour
  • 2 tsp. Baking powder
  • 1/4 tsp salt

Method

  1. Mix apples, nuts, and apricots together and place in a buttered baking dish.
  2. In a food processor or Robo-coupe, pulse the remaining ingredients into small pebble size pieces.
  3. Pour crust mix over the fruit and nut mixture.
  4. Bake 40 minutes at 375º.

Apple Cake

Ingredients

  • 1 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 1/2 cup vegetable oil
  • 2 tsp. vanilla
  • 3 eggs beaten
  • 3 cups flour
  • 1 1/2 tsp baking soda
  • 3 cups chopped apples (tart)-Golden delicious, grannies, and gala’s are great for this recipe
  • 2 cups pecans

Method

  1. In a mixing bowl, combine the oil, sugar, and the vanilla. (Mix 1)
  2. In a seperate bowl, add eggs, salt, and lemon juice. Beat until well blended.(Mix 2)
  3. Mix in flour, apples, soda, and nuts with mix 2.
  4. Combine Mix 2 and 1.
  5. Bake 1 hour 30 minutes at 325° in greased loaf pan.
