Alrady's Favorite Leftover Turkey Ideas

While not quite recipes these give you everything you need to stretch that turkey dollar. At about 50 cents per serving for the T-day Turkey You an stretch the leftovers to last several days and provide true value and taste for your family.

Okay if you are like me, you buy the biggest turkey you can and have lots of leftover turkey. With stores having the best deals of the year on turkey, it is wise to buy an extra turkey, cook it up and strip it for the freeze. The first one is my personal favorite and requested yearly by my husband and my daughter in law.


CREOLE Turkey Style

Chop one onion - dicing fine, chop one sweet red pepper and one stalk of celery into bite size pieces. SAUTE those ingredients in 2Blsp of vegetable oil. ADD 1 large can of stewed or crushed tomatoes.

** ADD 4-5 tsp of Chili powder (add 3 dash of hot sauce of extra kick) Stir in 4-5 cups of cut up leftover turkey. serve over leftover mashed potatoes or rice. for variety add frozen peas with turkey. Simmer for 20 minutes.

Creative Turkey Rollups

Tortilla shells - heated and warming. Heat all leftover ingredients that you have on hand that need warming and pull out the cranberry sauce. Lline up on counter and get ready ot build the roll up. The next part is intuitive and uses your creativity.

To each tortilla pile on 2-3 Tblsp. of leftover turkey meat and the leftovers you want: stuffing, yams, green beans , gravy, cranberries, Put just a teaspoon or two of the ingredient you want on top of turkey. roll up and eat. I like turkey, stuffing, smitchy gravy and cranberries

Curried Turkey Supreme: Find your favorite white sauce recipe or use Alf redo sauce packet and follow instructions. ADD 2 teaspoons curry power to the sauce.

Chop the following vegtables and saute over med heat in 2-3 tbls. oil. 1/2 onion, 1 green pepper, 1 red pepper, 1/2 cup mushrooms (optional) Stir in the white sauce (or white gravy), making sure the 2 tsp of curry was added to sauce. Taste and adjust flavoring, add milk to soften, add curry to strengthen flavors.

Add 1 cup chicken broth slowly until sauce is thinned to pourable but not runny. Serve over rice or leftover mashed potatoes. Add raisins or pineapple if desired.

Turkey Soup - freeze a pot of soup

Take all bones one onion chopped and 2 stalks of celery and cover with water and simmer on low boil for several hours. This makes a basic broth. Strain out the solid ingredients removing all meat from bone. (Throw all bone away) Take broth and either freeze in smaller portions or make large pot of soup adding broth: meat, chopped carrots, chopped potatoes, and celery. Add seasonings to taste. Suggested, rosemary, oregano, thyme, bay leave. or any of Emerils special blends for chicken. Thicken if desired with a 3 tbls. flour dissolved in 1/2 cup of water, add cool flour/water mix to HOT broth. Serve with crusty bread.
