Cook Corn with these Southern Corn Recipes

Cook corn that leaves them talking with these Southern corn recipes. Quick and Easy is how I do it!

Corn is a Southern Cooking Staple.  Corn on the cob, corn muffins, corn meal, corn bread, corn pudding, corn starch, corn starch, corn relish, creamed corn, corn casserole, corn tortillas, and more weave their way through the Southern collective cuisine. 

Here are a couple of corn recipes that will get you raves with the minimum of effort!

First of all, plop a bag of frozen corn in a microwaveable bowl with a lid.  Add a tablespoon of water.  Cook in the miocrowave  for around five minutes on high.  Add 1 teaspoon of onion powder, 1 teaspoon of sugar, and a liberal amount of salt and pepper. More than you normally would add.  I add around 1/2 teaspoon of pepper and 1 teaspoon of salt. Add around 1 tablespoon of margarine.Stir well. This tastes just like corn on the cob, and the sugar is the Southern secret!

The next corn recipe is a Corn Casserole, or Corn Pudding, as we call it in the South.  Preheat the oven to 350.  Empty one can of corn, drained, and one can of creamed corn in a bowl.  Add two eggs, around 3/4 cup milk, a tablespoon of melted butter, two teaspoons of sugar, 1 teaspoon of salt and 1/2 teaspoon of pepper.  Crush 3/4 sleeve Ritz crackers and add to the mix.  (If you have saltines, you can use those.) Add one teaspoon of  onion powder.  Sometimes I add a scant touch of nutmeg.   Mix well, pour into a baking dish, and then top with the remaining crushed Ritz. dotted with butter. Bake at 350 for 30-40 minutes, till center is somewhat firm, you may have to cover with foil if the crackers start to  burn.

Now, my favorite Quick and Easy cornbread recipe.  Nothing is more of a southern Recipe than Cornbread.  I use two boxes of the cheapest corn muffin mix.  I prepare by the box directions, and add two teaspoons of sugar.  I also add a sprinkle of cayenne. Oil your breadmaker and place in there on CA KE setting.  If you want, place in an oiled pan and bake by the Muffin directions.  Add butter to the top at the end..
