first choose your lamb, usually one that fits your spit roaster.

mix lemon and oil in a 50/50 ratio, now add a few cloves of garlic crush before you add into the baste mix, grab a handfull of dry oregano and also add to the mix , stir the baste untill everything has been mixed together take half the baste aside. cut open your lamb and stuff some of the baste in your lamb then sow it up with cotton so its all sealed, leave this for a few hours, you can also poke holes in the lamb and stuff it with garlic.

now that you have prepared the lamb we will start the bbq makes sure you have hot coals in your bbq and lay them out eavenly now push most the coals to each side of the bbq where the head and tale of the lamb would be, you do this as there is little meat near the ribs of the lamb eg the middle and you do not want to burn what ever meat is there, when you are happy with your bbq heat mount the lamb on the spit roaster and let it spin , in the first two minutes baste your lamb with butter all over and let it cook for 20 mins without basting it with your garlic oil lemon mix, after this period you can start to baste the lamb every 5-10-15 minutes with your mix making sure it doesnt burn in between basting periods. if a certain part is cooking to quickly then you must move the coal from under that area, ideally you want the lamb to cook over the next 2- 3.5 hours whilst you slowly carve the cooked meat off the lamb as it cooks.
