This tasty mozzarella stuffed cheeseburgers recipe cooked on the grill will have all your guests coming back for seconds.

2 lbs Ground beef (Chuck, round, or even turkey will work too)
1/2 lb Fresh mozzarella cheese
1 Large yellow onion
Small pack sliced fresh mushrooms
3  Tbsp olive oil
Hamburger buns
Aluminum foil

Separate enough ground beef as if you were going to make two hamburgers and shape them into two patties. Break off a nice piece of the mozzarella cheese and place it in the middle of one of the patties, take the other patty and lay it over the hamburger holding the cheese. Press the two sides together around the entire patty to seal in the mozzarella cheese.

Grill the cheeseburgers to desired doneness; at least 5 minutes per side to make sure the cheese melts.
While they are cooking, cut the onion in thin slices and put them along with the mushrooms in a sheet of aluminum foil and pour the olive oil over them. Seal the top and sides of the aluminum foil making a pouch for them to cook in. Throw them on the grill and let them saute while the mozzarella stuffed cheeseburgers are grilling.
After your cheeseburgers are done, put them on a bun top with the sauteed onions and mushrooms and dig in!!
