Chicken Chow Mein

My recipe for chicken chow mein I learned how to make from my late mother. It is very good and easy to make. This recipe is not the same as your corner Chinese restaurants. It does not have any Chinese noodles but rather is a chunky chicken and vegetable base served over rice.

Chick Chow Mein

- 2 pound chicken pieces bone in

- 3 cups uncooked rice

- 1 cup celery chopped

- 1 large onion diced

- 1 can chinese vegtables

-1 can water chestnuts

-1 red bell pepper choped

- 1 tablespoon soy sauce

-1 package bean sprouts

-1 tablespoon corn starch

- Salt and pepper to taste

- optional fried chinese noodles for garnish and to give this dish a crunch. ( you can buy in a can at the super   market)

In a large pot add 4 cups of water and chicken. Cook until done. Let cool then take off the bone and cut into small pieces. Strain the chicken stock and add back into large pot. While the vegtables are cooking you may cook your rice either in a rice cooker or on the stove top. Then add the chicken,onions,celery,peppers and salt and pepper. Let cook until tender. Then add your bean sprouts,and canned vegtables. Let simmer on low then mix cornstarch into the soy sauce and add to pot. Cook for about three minutes and serve over rice. You may add chinese fried noodles over the top and add more soy sauce to taste.

I'll have to try this one. My two oldest love chicken and rice. Of course, they are half Japanese/Korean..lol! :)
