Bean, carrot and potato salad

This wonderful salad could be used as an appetizer.

The salad serves 3-4. The time for its preparation is about an hour.

Ingredients:

300 gr potatoes

5 carrots

300 gr boiled white bean

4-5 fresh green onions

½ tea spoon salt

3 tea spoons lemon juice

1 pinch rosemary

Olive oil

Method of preparation:

Boil the potatoes first, cool them and peel them. Then boil the carrots. While they are boiling, cut the potatoes into cube shapes. The next step is to cut the carrots and to mix them with the boiled white beans, the cut potatoes. In a deep bowl place these ingredients and add the cut into round shape fresh green onions. Then pour some olive oil and the lemon juice. Sprinkle salt to taste and add the rosemary. Stir well and leave the salad for about 30 minutes. Enjoy it!
