Three Delicious Hamburger Casserole Recipes

A Hamburger Casserole is a stable for many families as well as church socials. The following recipes are great for any occasion. Try these tried and proved dishes: Hamburger and Potato Casserole, Hamburger and Corn Casserole, and a Mexican Casserole.

Hamburger and Potato Casserole

  • 3 T. butter
  • 3 T. flour
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 c. milk
  • 1 c. cheese
  • 3 lg. potatoes, sliced
  • 1 lb. ground beef, browned and drained
  • 1 onion, chopped

Melt butter and stir in flour, salt and pepper.  Gradually add milk and cook until thick and smooth.  Add cheese and stir until melted.  Alternate layers of potatoes, beef and onion in greased casserole dish.  Pour sauce over layers.  Bake at 350 degrees for 1 1/2 hours, uncovered.

Hamburger Corn Casserole

  • 1 pkg. egg noodles, cooked
  • 1 lb. hamburger meat
  • 1 chopped onion
  • 8 oz. chopped pimentos (opt.)
  • 8 oz. sour cream
  • 1 can whole kernel corn, drained
  • 1 can condensed cream of chicken soup
  • 1 can condensed cream of mushroom soup
  • Salt and pepper, to taste
  • Bread crumbs and butter, for topping

Preheat oven to 350 degrees.  Brown hamburger and onions in a large skillet; drain.  Add pimentos, sour cream, corn, soups, noodles, salt and pepper to meat and onion mixture.  Sprinkle with bread crumbs and butter.  Bake, uncovered, for 30 minutes.  If desired sprinkle top with cheese.

Mexican Casserole

  • 2 lb. hamburger
  • 2 cans cream of chicken soup
  • 1 can Ro-Tel tomatoes
  • 1 sm. pkg. Velveeta cheese
  • 1 pkg. flour tortillas
  • 2 cans ranch-style or chili hot beans
  • 1 onion

Brown meat and onion in skillet.  Mix together in saucepan, the beans, Ro-Tel and cream of chicken soup; heat.  Add meat and onion; let heat a few minutes.  Cover bottom of casserole dish with layer of tortillas, then layer of meat mixture, until dish is full.  Cover with strips of cheese and let it heat in oven at 350 degrees until the cheese melts.
