How to Make Sugar Free Low Carb Mock Ice Cream

This is a super easy recipe for sugar free, low carb "mock" ice-cream. I'm on the Atkins plan and this totally satisfies my ice-cream cravings. Only 18 carbs for the whole batch, and it makes enough to eat on for a couple days. Sooooo yummy! Even if your not on some kind of diet you need to try this!

This is a super easy recipe for sugar free, low carb "mock" ice-cream. I'm on the Atkins plan and this totally satisfies my ice-cream cravings. Only 18 carbs for the whole batch, and it makes enough to eat on for a couple days. Sooooo yummy! Even if your not on some kind of diet you need to try this!

Things You’ll Need:
  • 1 package sugar free Jello Pudding mix. Whatever kind you like. I use French Vanilla.
  • 1 pint (2 cups) of heavy cream

Step 1

In a large bowl, combine pudding mix and cream. Whip vigorously for 2 mintues or so. It'll get pretty thick.

Step 2

Put the "ice cream" into a freezer safe container.

Step 3

It usually takes 2 hours or so to freeze totally. It will have a very similar texture to real ice-cream, but it will be creamier. It is delicious!

  • You can "customize" your ice cream by adding your own ingredients. Try to stick with natural ingredients. Berries such as blackberries, strawberries, raspberries, and blueberries, can be mixed into the pudding mix before freezing. You can also add nuts for a little crunch. Try pecans, pistachios, peanuts, etc. Just remember that by adding extra ingredients, you are adding sugars and carbs. However, the good thing about this recipe is that the sugar count is zero and the carb count is so low that if you add natural ingredients you'll still end up with a pretty low count.
  • You can also try mixing different flavors of pudding. Just be sure to buy SUGAR FREE!

This sounds really good, but how much cream? How much pudding mix? We need a little more info here. Still gets a 4* rating.
