How to Spit-Roast Game Birds or Chicken

Spit-Roasted Game Birds-Summer is coming and it's always great to cook outside. Whether it's for the family or for friends, this recipe will wow them. This recipe makes 12 servings. It includes quail, game hens, pheasants or chicken.

INGREDIENTS:

  • 2 Pheasants or small chickens
  • 8 quail
  • 4 game hens or squab
  • 2-12 ounce cans of beer
  • 1/2 cup of vegetable or olive oil
  • 4 cloves garlic-crushed
  • 4 Serrano peppers-seeded and finely chopped
  • 2 limes-thinly sliced
  • 4 Tablespoons of soy sauce
  • 4 Teaspoons of Margarita salt
  • 1 Teaspoon of dried pepper flakes

DIRECTIONS:

Prepare the Marinade:  Combine soy sauce, beer, garlic, pepper flakes, oil, lime, peppers and salt.

  1. Clean, rinse and dry the birds.  Place them in 1 or 2 heavy, large plastic food bags. 
  2. Pour the marinade into the bags with the birds and seal.  Turn and shake the bags until the birds are coated with the mrinade.  Refrigerate overnight, turning the bags occasionally.
  3. Remove the birds from the bags and posotion them on your turning spit.  Tie the legs and the wings close to the body so they won't overcook.
  4. Roast in a covered grill over medium-hot coals or in a 350º oven.  Large birds will take 1 to 1 1/2 hours, smaller birds will take about 30 minutes.  Baste the birds every 5 minutes.
  5. To check if they're done, poke a fork between the thigh and body.  If juice is clear, they are done.
