How to Make Mayonnaise

Making mayonnaise using a whisk, blender,or a food processor.

To make mayonnaise with a whisk, beat one egg yolk until it is thick.
Add 1/4 teaspoon of salt, 1/4 teaspoon of dry mustard, and just a pinch of pepper in a large mixing bowl . Add 3/4 cup of olive or vegetable oil, little by little, whisking well while adding the oil. When this mixture becomes thick, add one tablespoon of lemon juice or white vinegar. Stir. Makes about 3/4 of a cup of mayonnaise.

To make mayonnaise using a blender, use the same ingredients as you did above, except you will add a whole egg with the thickened egg yolk; put ingredients in a large mixing bowl,(except oil) and blend on low speed for about 15 seconds. Continue at high speed , adding the oil very slowly, until mayonnaise is mixed well and looks creamy.

To make using a food processor : whirl one whole egg, 2 tablespoons of lemon juice or white vinegar, 3/4 teaspoon of salt, 1/2 teaspoon of dry mustard, and 1/8 teaspoon pepper for 4 seconds. Keep processing, adding in a slow thin stream; the oil. Process until well blended.

Refrigerate in a tightly sealed container. This mayonnaise will last for about one week. If mayonnaise becomes curdled, revive it by adding one egg yolk, whisked and thickened in a large bowl, beat in a few drops of oil, and then gradually beat in the mayonnaise. Chill.
