Like pizza for breakfast? Well here is a tasty treat, with a luscious sausage gravy and a mix of shredded mozzarella and cheddar for topping off a layer of fluffy scrambled eggs, this is one pie, that's sure to please! An easy recipe that you will surely want to keep on file.

I thought of this, one morning, when my son wanted something different for breakfast and I noticed I still had a box of Jiffy Brand Pizza Crust in the cabinet. Following the directions on the box for the crust, I made the foundation for my yummy morning pizza. I didn't have a pizza pan so I used a nice heavy cookie sheet dusted with corn meal (prevents sticking and burning) to bake my pizza. I rolled out the dough and place it as best as I could in the pan stretching carefully to come up to the sides of the pan. Gently poke all over with a fork to allow steam to escape while baking and the pizza crust doesn't balloon up.

Putting the uncooked crust aside I then prepare the sausage gravy, cooking the sausage until it is no longer pink and then drain it very well. (you can pat with paper towel if you like) I like using turkey breakfast sausage sold in a bulk 1 Lb roll, this is usually less expensive and has less of a fat content. Use what you prefer but be sure to drain the sausage very well or the pizza will be soggy.

For the gravy you will need the following: 1/2 stick of butter or margerine, 1/4 cup of all purpose flour, 2 cups of milk, 1/4 tsp of dry mustard (optional) salt and pepper as desired to fit your taste.

Cook the butter or margarine, in a large heavy sauce pan, over medium high heat until melted. Slowly stir the flour into the melted butter, this should make a medium thick paste, continue stirring and cooking over the same heat for about 1 and 1/2 minute don't stop stirring. Add the milk trying to keep a steady stirring rhythm until all the milk is incorporated, this will help to ensure a smooth texture with no lumps. Continue cooking for about 4 to 5 minutes until a nice gravy is achieved, stir in the dry mustard, salt and pepper and season to taste. Set this aside and let cool while you prepare the fluffy scrambled eggs.

For the fluffy scrambled eggs take 8 eggs and break into a large bowl, add about 1/4 cup milk or maybe a touch more, a little pepper and beat until thoroughly mixed and foamy. Cook over medium heat, in a large pan, keeping it covered between stirrings. When the eggs are almost settled but still moist fluff with a fork and get ready to decorate your pie.

Putting it all together: Start with a scoop of gravy spread all over the crust. Put the scrambled eggs over the top of the gravy trying to fill up any large areas and then sprinkle the crumbles of sausage over that. Pour the remaining gravy over the sausage and eggs then sprinkle with mixed cheeses, 1/2 cup each of Mozzarella and Cheddar. Place in the center of a pre-heated oven of 425 for 10 minutes. Reduce heat to 350 and bake until top is golden and gravy bubbly. Let cool slightly, serve and enjoy!
