One of my family's favorite salads is spinach salad. My daughter will make a meal off this salad alone. Sometimes I add apples, sometimes strawberries, peaches and oranges. This recipe is so versatile you can use any fruit in this salad. This recipe is also good for diabetics.

I prefer spinach salad to a salad made with iceburg lettuce. I like the taste of iceburg lettuce in salad, but there is really not much nutrition there. I just think spinach is heartier than lettuce. I do like romaine lettuce also. If you don't like all spinach, you can mix it up with lettuce if you want to.

Some of you may want to go on the lighter side with the cheese and the salad dressing, but personally, I don't care for the fat free or light cheese and salad dressings. I'd rather use a little less of the real thing because it is all about taste and texture for me. If I don't like it, I won't eat it; therefore, substitute if you wish.

Here is what you need to make this spinach salad recipe:

1 bag of spinach salad leaves
1 large apple, or any fruit you choose
1/2 cup of mixed nuts
1/2 bag of mozzarella cheese
1/2 cup of spicy Italian dressing or a wine based dressing if you prefer

Now just toss the salad and serve.

Enjoy!
