Hot and Hearty Chicken Noodle Soup Recipe

A recipe for hot and hearty chicken noodle soup. It's sure to please on a cold winter's day or anytime you are in the mood for soup.

Who doesn't love a hot bowl of chicken noodle soup on a cold winter's day? There's nothing like coming in from the cold and having a hot bowl of soup served with warm buttered bread. Many people love soup all year round, no matter what the weather is like. This chicken noodle soup recipe is easy to make and can be served for lunch or dinner. Once you get the basics down, you can experiment with different vegetables, different types of noodles or spices. You could even use turkey in place of the chicken. This is a good idea around holidays when you may have a lot of leftover turkey.

Ingredients for Hot and Hearty Chicken Noodle soup

1 tablespoon butter or margarine
1 pound cubed boneless, skinless chicken breast
3/4 cup finely chopped onion
1/2 cup finely chopped celery
2 cans chicken broth
1/4 teaspoon chives
black pepper to taste
salt to taste
1 cup carrots, chopped
5 cups water
Egg noodles

Directions to make Hot and Hearty Chicken Noodle soup

In a large sauce pan, saute chicken, onion and celery with butter or margarine until chicken is no longer pink. Add chicken broth, chives, black pepper, salt, carrots and water. Bring to a slight boil and then simmer on low heat for 20 minutes. Add egg noodles and cook for approximately 15 more minutes or until noodles are done, but not mushy.

Note: Amount of ingredients can be adjusted to suit individual tastes. You may also use other parts of chicken other than the breast.
