How to Make Sugarless Cream Cheese Frosting

This is the traditional frosting for carrot cake but healthier since it doesn't have all the sugar. This recipe could come in handy if you want to cut back on the sugar in your diet or perhaps you know a diabetic who loves cream cheese frosting. This recipe frosts one 2-layer cake and is relatively easy to make.

Things You’ll Need:
  • 1 1/2 teaspoons unflavored gelatin
  • 2 teaspoons vanilla extract
  • 1 lb. light cream cheese
  • 1/2 cup apple juice concentrate
  • 1/2 cup finely chopped raisins (optional)
  • blender or food processor
  • large mixing bowl
  • small saucepan
  • refrigerator
Step1 set aside 2 tablespoons of the apple juice
Step2 blend well Put the rest of the apple juice, cream cheese, vanilla (raisins if you want) into a blender or food processor until smooth.
Step3 into a bowl Put the cream cheese mixture into a mixing bowl.
Step4 Stir the gelatin and the 2 tablespoons of apple juice in a small saucepan. Let it stand for 1 minute.
Step5 Heat the saucepan with the gelatin mixture till it is boiling and stir to dissolve the gelatin.
Step6 Beat the gelatin mixture into the cream cheese mixture until its well blended.
Step7 Refrigerate until the frosting sets, 30 - 60 minutes.
Step8 Frost the cake and enjoy!
