How to Make a Kuchikami Sake

I will tell you about a really simple way to make a really traditional sake from Japan!

If you’re still curious how to make one, then I will tell you, it’s easy to make! ( but can’t guaranteed the taste :P )

Even that’s so, please remember this that I’m not a professional in this thing, I had tested this recipe and it was okay, I know the result and how to make my own product (not for sale! of course!), but just te be careful, please note that this product can be resulted a food poison, so don’t rely to much with it and please be careful, because I found this recipe also from an anime titled Moyashimon…

Why do I post this then? Well, it’s just so you know how to make it, as the statement above, I also have to say that this recipe will be not very detailed, as I didn’t measure it. Because I only wirte the simplest one and the easiest one to make.

Then, lets move on to the main topic!

Ingredients :

  1. Water (the same amount with the rice)
  2. Rice (the same amount with the water)
  3. 1 or 2 Bowl(s)
  4. Paper or a cover for the bowl
  5. Bottle (plastic or glass) with a dark color (recommended : red or brown) and cover it to prevent the sunlight to get through of it.

How to?

  1. Brush your teeth and clean your mouth!
  2. Pick some rice (but don’t to much), and chew it slowly until it become sweet, and puke it into a bowl until everything has well chewed.
  3. Add the water to the mix, and cover the bowl, make sure there is no sunlight in the place where you keep it.
  4. Watch the degrees! Don’t be too cold or warm, just keep it in a room.
  5. Wait for 3-6 days, let it brewed by itself.
  6. Check out the mix, if it’s already smelled like an alcohol, then it’s ready to be served!
  7. If you don’t want to drink it directly, just put it on the bottle and keep it, but make sure there’s no sunlight in that go through or in the place where you keep it.

The taste?

The taste of kuchikame sake usually always sour, if it’s indeed sour then you have done it (but I can’t tell how sour is it, it’s up to how you make it), but you can keep the sake for more than a week, it’s up to you ^^

Steril?

It’s indeed steril, the more alcohol it has, the more steril it is. As you may have known it, alcohol often used to clean things from germs.

If you still curious about the basic theory or what happened in the process, what I can say is rice that you chewed will be turned into sweets because of the saliva. And if you mix it with water, it will slowly become an alcohol. OK, that’s all, hope you enjoy it :P
