If you're like me and have always paid a huge price for thick and chunky salsa because you thought it was a natural occurring by product of a Mexican hat dance held in a tomato patch while being pelted with Jalapeno pepper, well read on.

If you get the idea that I like salsa but don't want to spend a ton of money or a couple of days making my own, you're right. Just follow the simple direction below and you'll have the best tasting salsa you've had in no time.

In the Mexican food section of your local food store pick up the following:

One 10oz can Ro-Tel Diced Tomatoes w/Lime Juice & Cilantro

Two 10oz can Ro-Tel diced Tomatoes & Green Chilies

One 10oz can Ro-Tel diced tomatoes with Habaneros (Only if You like Hot)

Two 28oz can Diced Tomatoes

One 16oz can Tomato Sauce

One medium Onion (diced)

In a large sauce pan sauté the onion. Open all cans and place Tomato sauce on side for use later. Drain all remaining cans and place in sauce pan. Bring mixture to simmer (you may want to simmer til some of the water is cooked away) then add Tomato sauce, stir, bring mixture to simmer and remove from heat. Place in jars for storage. The Ro-Tel is sold at all Wal-Mart stores for 83 cents a can. This will make about 2 quarts for under $6.00 and takes about 15 minutes to make. You won't believe the great taste. The only work involved is opening the cans.

If you use a lot of salsa double the above to save time.

The Hot Diced Tomatoes with Habaneros is really hot.
