Blueberry Pancakes with Crispy Pancetta

This blueberry pancakes with pancetta is perfect for brunch-time with you friend.

This blueberry pancakes with pancetta is perfect for  brunch time with your friends. The photograph of the recipe is shown at the end of the article.

Ingredients:

200g plain flour

1 teaspoon baking powder, heap

200ml milk

1 large egg

4 tablespoon wild blueberry conserve

Unsalted butter, for cooking

10 rashers pancetta or smoked streaky bacon, to serve

2 tablespoon blueberry conserve, to serve

Method:

1. Sift the flour into a bowl and stir in the baking powder. Beat together the milk and the egg, then stir into the flour. Gently fold in the blueberry conserve.

2. To make a pancake about 10cm in diameter, heat a little of the butter in a large frying pan a pour in a heap tablespoon of the butter mixture. Cook for 2-3 minutes, until little holes appear on the surface, then flip over. Keep warm, while cooking the remaining pancakes in the same way.

3. Meanwhile, grill the pancetta or bacon until crispy. Serve 2-3 pancakes per person, and top with some more blueberry conserve and the crispy pancetta.

This is a delicious looking receipe of pancakes, I will have to try the fried pacetta. Blueberries are such a good addition too!
