Bloody Bacon & Gorgonzola Salad

This salad is overflowing with flavor, color and texture. Blood oranges, gorgonzola and bacon blend together for an unexpected, healthy treat! If you tire of boring side salad, this recipe will definitely expand your roughage repertoire!

This is a salad that can be served with a meal, or as a light lunch, by itself. Although the fat content of the dressing and bacon are a bit higher, the balance of this salad is fruit and vegetables, and the fat content is used in moderation, thus keeping this at a healthy level!

Ingredients

-1 bag Dole Fresh Discoveries Mediterranean packaged salad

-1 small container gorgonzola cheese

-4-5 strips Oscar Mayer Ready To Serve Bacon

-1 container grape tomatoes

-1-2 small blood oranges

-1 small red onion

-2 tsp Marzetti Asiago Peppercorn dressing, per salad

-2 tsp Marzetti Lite Honey French dressing, per salad

For serving purposes, make each salad individually, to allow for best flavor.

Preparation

  • Peel and coarsely chop red onion
  • Prepare 4-5 slices of bacon in microwave, cook for 20-23 seconds. Allow to cool, and then crumble
  • Peel orange, and slice thin (¼ -inch) crosswise. Remove seeds from center of each slice, and then cut into larger chunks
  • In each bowl, fill to rim with Mediterranean lettuce
  • Sprinkle about 1 TBS of crumbled bacon over top of each salad
  • Sprinkle roughly 2 TBS red onion over each salad
  • Add 5-6 grape tomatoes, dispersing evenly over top for appearance
  • Add orange pieces, (one slice per salad, roughly)
  • Sprinkle finely-crumbled gorgonzola cheese over top of each salad
  • Drizzle both dressings over top of each salad

This is a salad that combines the luscious flavor of blood oranges with a touch of salty goodness from the cheese and bacon, and just a hint of spice from the two dressings. This recipe will make 4 individual salads.
