Prepare Southern White Gravy, Homemade Biscuits, and Scrambled Eggs – A Tribute to My Dad

Do you love a big breakfast on the weekends? This article is a tribute to my dad who made me this breakfast when I was home from college. Now, I make this breakfast for my family on the weekend and it is like turning back time. Yummy! The following will teach you to make scrambled eggs, southern white gravy and homemade biscuits. Plus, Papa’s famous scrambled eggs.
Things you’ll need
White Gravy
Bacon, keep a couple of teaspoons of the bacon grease for your gravy
2 tablespoons white flour
2-3 cups milk
Salt and pepper
Fluffy Homemade Biscuits
2 cups flour
3 tablespoons of baking powder
2 teaspoons of sugar
¼ teaspoon salt
½ cup butter or margarine
2/3 cup milk
Scrambled Eggs
Eggs, 1-2 eggs per person
¼ cup milk
2 tablespoons butter
¼ cup chopped onion
¼ cup chopped pepper
sprinkles of shredded cheese
Step 1
Fry your bacon and drain on paper towel. Save about 2-3 tablespoons of bacon grease in your skillet. While skillet is still hot, add flour to grease to make rue. Stir constantly to cook the flour and grease thoroughly until bubbly, you want to cook the flour but not burn it. Lower heat and add milk slowly while stirring. Add salt and pepper and keep stirring. The gravy will be thin at first, but it will slowly get thicker. Keep cooking until you get the desired consistency.
Step 2
While gravy is cooking, start your biscuits. Preheat oven to 350 degrees. Mix together all of the dry ingredients. Put butter in the microwave for about 15 seconds or until soft. Add to dry ingredients, stirring until well mixed. I use a cutter utensil that is used for pie crust (not sure of its real name). Now, add 2/3 cup of milk to the mixture. Mix well. Roll out biscuits to cut or make drop biscuits. Put on un-greased cookie sheet for 10-15 minutes or until golden brown depending on the size of your biscuits.
Step 3
Keep stirring your gravy, keeping in on low so it doesn’t burn. Now start your scrambled eggs. Sauté peppers and onion in a skillet until almost done. Put eggs and milk into a bowl and whisk until scrambled. Lower your heat of your skillet and pour in egg mixture. Stir constantly so they cook evenly and won’t stick. Salt and pepper, just a little. When done, sprinkle with shredded cheese before serving.
Step 4
Set your table while everything finishes up. Voila, Papa’s famous weekend breakfast. Better than any restaurant because it is (or was) cooked with love! I really miss my dad, but can always cook his breakfast and feel the love.

This does sound good! It sounds very “southern” Here in Maine you won’t find these kind of recipes being done,this will be a wonderful twist on the norm!
