Prawn and Pineapple Fried Rice

Prawn and pineapple fried rice is a recipe specially made for a healthy breakfast. It can be serve with your favorite fruit with an enticing arrangement on your dish.

Prawn and pineapple fried rice is a recipe specially made for a healthy breakfast. It can be serve with your favorite fruit with an enticing arrangement on your dish. Photograph of the recipe is shown at the end of the article:

 

Ingredients: 

4 cups cooked rice

1 cup mixed vegetables

500g frozen or fresh prawn, shelled

1 pineapple, biggest available

3 cloves of ginger

½ of medium onion, diced

2 tablespoons of peanut oil

1 egg

2 tablespoons of light soy sauce

Procedure: 

1. Wash the pineapple including the leaves, cut a quarter part of the pineapple as shown on the photograph, scoop out the pulp of the pineapple using spoon and  knife, slice the pulp into chunks, reserve both pulp and shell. Drain the remaining juice in the pineapple. 

2. In a pan cook the pineapple with its juice until the juice thickened, dish out.  

3. Heat the peanut oil in same cleaned pan; sauté the garlic till golden brown put in the onion cook until transparent. Add the prawn cook till pinkish, add vegetables cook till just tender, add the rice and the pineapple; fry for 15 minutes, crack on the egg and sprinkle the light soy sauce ; fry more until the egg and the sauce is evenly distributed. 

4. Dish out the fried rice into the pineapple shell, and arrange with your favorite fruit in a serving plate. 

Tips:

- Jasmine rice is recommended.  Cook rice in advance using rice cooker and     

   refrigerate.

- Serve recipe while its hot.
