Easy Chicken with Pesto Cream Sauce

You probably have everything to make this on hand already!


Things You’ll Need:

  • 4 boneless chicken breast halves
  • 1/2 package of cream cheese
  • 1/4 C water
  • 1/4 C prepared pesto
  • 2 C grape tomatoes
  • 1 C Mozzerella cheese
Heat a little oil in a skillet or coat with cooking spray. When the skillet is sufficiently heated, place the chicken breast halves in the skillet and cover the pan. Cook for about 5 minutes on each side or until cooked through. Remove the chicken from the skillet and set it aside. You could cut up the chicken in bite size pieces if you like.
Reduce the heat to medium low. Add the cut-up cream cheese, water, pesto and tomatoes to the skillet. Cook and stir the sauce for a couple of minutes until fully combined.
Put the chicken back in the skillet and move chicken around to coat in the sauce. Cook until heated through.
erve the chicken on a bed of cooked pasta. Pour a little of the sauce over each serving. Sprinkle the chicken with Mozzerella cheese and garnish with basil leaves. Sever with a spinach salad and garlic bread.
