Fried Bologna Sandwich
My neighbor taught me about this sandwich. Being the Yankee that I am, I had never thought about heating up bologna. Apparently Midwestern and Southern folk agree that this is one good sandwich. This is a great way to make a plain old bologna sandwich a bit more comforting and special.

Things You’ll Need:
- your favorite bologna - thin sliced in a package, thin sliced at the deli, or thick sliced off the roll at home are all fine.
- mayonnaise
- mustard
- your favorite sliced cheese
- your favorite toasted bread
- sliced onion, if you want
Step 1: Heat up your skillet over medium heat. There is no need to grease the pan.
Step 2: Place as many slices of bologna in the pan as will fit, or that you will want to eat. Toss the onions in with the balogna if you want them sauteed.
Step 3: Cook until the edges of the bologna start to brown a bit. I will look like slices of ham that you might eat for breakfast. Make a slit in the bologna slice if you want to prevent it from curling up.
Step 4: Place the bologna slices on a paper towel, on a plate as you would with cooked bacon. The bologna will curl slightly.
Step 5: Select 2 or 3 bologna slices for your sandwich. Place them on top of one slice of toasted bread. Top with cheese. and cooked onions if you made them, or use raw onion. Spread mayo and mustard on the other slice of bread. Place the second slice of bread on top of the other.
Serve with soup, potato salad, chips or your other favorite sides.
