Pork: Sweet and Sour

Pork sweet and sour with pineapple and vegetables.

MJPatrick's pork sweet and sour is a recipe that everybody will love. Photograph of the recipe is shown at the end of the article and it was taken by me.

Ingredients:

1 kg pork fillets

3 tablespoons hoi sin sauce

Corn flour

Vegetable oil for shallow frying

2 teaspoons peanut oil

2 cucumbers

440g pineapple sliced in juice

1 medium onion, diced

1 green pepper diced

2 trimmed celery stick, sliced thinly

3 tablespoons tomato sauce

3 tablespoon light soy sauce

1/3 cup white vinegar

1 tablespoon corn flour, extra

1/3 cup chicken stock

Procedure:

1. Cut pork into 1cm-thick slices, combine in medium bowl with hoi sin sauce.

   Coat pork slices in corn flour, shake off excess.

2. Heat vegetable oil in pan, fry pork by batch until browned all over and cooked through; drain by using kitchen paper towel.

3.  Drain pineapple over a small bowl; reserve juice. Cut cucumber lengthwise scoop out seed and discard using a spoon; cut into 3cm slices.

4. Heat peanut oil in same cleaned pan; sauté onion until just tender; add in pepper and celery until just tender. Stir in reserve pineapple juice, tomato sauce, soy sauce vinegar and extra corn flour dissolved in with the stock. Stir fry until sauce boils and thickens. Stir in pork, pineapple pieces and cucumber; cook until heated through.
