How to Make Cashew or Tofu Casserole

This is a great recipe my mom used to make. We wherent't Vegetarian but this recipe was amazing. I just got the recipe from her because it was lost for so long. Hope you enjoy!

  • 1 can mushrooms
  • 1 C celery
  • 1 C tofu cut into cubes
  • 1 1/2 C cashews
  • 1 C onion diced
  • 1 can chow mein noodles
  • 1 can mushroom soup then one can filled with water
  • This is a very simple recipe. Preheat oven to 300 degrees.

    Open can of mushrooms and drain water. Get out cutting board and cut tofu into cubes. I like to use the silkier tofu. Dice up onion. I like to sautee in butter but you do not have to do this, just an idea. Cut celery into pieces and put mushrooms, celery, tofu, cashews and onion into casserole pan. Cover with mushroom soup then adding a can of water. Mix all ingreients together. Making sure mushroom soup is blended in. Then sprinkle with chow mein noodles. Cover with aluminum foil and bake for 45 minutes. Taking aluminum foil off for last 5 minutes. Let cool and serve.
