How to Make the Best Twice Baked Potatoes

This is the best recipe I have found. I am now an addict!

  • 4 med potatoes
  • 4 oz cheese
  • 1/2 cup sour cream
  • 1/2 cup buttermilk
  • 2 tb butter
  • 3 green onions
  • salt & pepper
  • Clean and poke holes in your potatoes. Then wrap in al. foil. Place on cookie sheet. Bake at 400 for about an hour or so, check about halfway through.
  • While you are waiting on that you can get the rest ready. Mix sour cream, buttermilk, butter, salt and pepper in bowl together. Add 3 oz of cheese. You can add more you if you would like. When potatoes are finished let them cool for 10 minutes or so. Then cut in half longwise. Scoop out insides and put into seperate bowl. Place potato skins back in oven for apox 10 minutes. In the meantime Stir about a quarter of the sour cream mixture into potatoes. Keep adding untill you test it and deside that is what you where looking for! Let potatoes cool for a few minutes and scoop mixture into. Set in fridge to let cool. When you are ready to serve warm and add shredded cheese and chopped green onions. Can add cut up bacon if you would like too. I'm getting hungry just thinking about it!

    I make mine with bacon and bleu cheese, but this sounds good too
