Delicious Beef Stew - Crock Pot

This beef stew is the ultimate comfort food. The sauce is just thick enough, the meat is just tender enough and there are just enough of the right kinds of vegetables. Serve with some nice crusty bread or some biscuits and you've got a fabulous meal.

Things You’ll Need:
  • 3 qt slow cooker
  • 2 lbs stew beef cubes
  • cooking oil
  • a little flour
  • 1 32 oz can tomato juice
  • 6 garlic cloves, crushed
  • 1 onion, diced
  • 1 stalk celery sliced
  • 3 medium carrots sliced
  • 1/2 tsp oregano
  • 1/2 tsp black pepper
Step1 Heat up a skillet with some vegetable oil. While the pan heats, dredge the stew beef cubes in flour. Brown the stew beef on all sides and place it in the crock. You will probably need to brown the beef in two batches, adding a bit more oil as you begin the second batch.

Step2 While the beef is cooking, chop the vegetables: carrots, potato and celery. Mix all the ingredients (listed in the blue box to the right) together in the crock along with the beef.

Step3 Cover and cook on low for 6-7 hours. You will know its done when the stew beef begins to become tender. The sauce should be a rich brown and will have thickened.

Step4 Serve with biscuits or crusty bread for a nice hearty meal on a cold evening. This recipe easily serves 6.
