How to Make Cowboy Caviar This is a recipe for an amazing southern favorite. Whether you’re a southerner or not you will enjoy this recipe. This would be great for any party, Super Bowl Sunday, or just hanging out! This is a spicy and unique dish that is great with chips, crackers or bread.

How to Make Cowboy Caviar

This is a recipe for an amazing southern favorite.  Whether you’re a southerner or not you will enjoy this recipe.  This would be great for any party, Super Bowl Sunday, or just hanging out!  This is a spicy and unique dish that is great with chips, crackers or bread.

1 Can (15 oz) Black-eyed Peas or Black Beans, rinsed and drained

2 Cloves Garlic, Minced

¼ Cup finely Chopped Red Sweet Pepper

¼ Cup thinly Sliced Green Onions (2)

1 Tablespoon Cooking Oil

1-2 fresh Green Jalapeno Peppers, Seeded and Chopped

¼ Teaspoon Cracked Pepper

Dash of Salt

2 Tablespoons Apple Cider Vinegar

Assorted Crackers or Chips

In a bowl, combine beans or peas, green onions, sweet pepper, garlic, onion, vinegar, jalapenos, pepper, and salt.  Cover and chill overnight.

To serve, transfer to a serving dish. Serve with crackers or tortilla chips.  This will keep in the refrigerator, covered, for up to 4 days. 

In a Sauce Pan: Combine olive oil, vinegar, and sugar.  Heat on medium until sugar has melted. Once Sugar has melted set aside to cool for 5 minutes. 

Pour marinade over ingredients in bowl, cover and refrigerate overnight.  This can also be made early morning for a party that evening. 

Serve with Chips, Bread, Toast Points, Melba Toast, or Fritos.
