Soy Chicken with Ginger and Green Onion Sauce

Main ingredients:

2 kg chicken

8 cups chicken stock

 2 star anise

5cm fresh ginger, sliced thinly

2 tablespoon light soy sauce

1 medium brown onion quartered

2 teaspoon peppercorn 

Serving Sauce: 

3 tablespoon peanut oil

1 teaspoon light soy sauce

I tablespoon grated ginger

2 green onion chopped finely 

Procedure (Main): 

1.In a large pan put in chicken, add in chicken stock, be sure to cover all the chicken, star anise, ginger, soy sauce, onion and pepper corn. Bring to boil, reduce heat and simmer gently, uncovered, about 40 minutes or until the chicken is tender enough. Remove from heat cool chicken in stock. 

2. Take out chicken and put in a plate; cover with foil. Reserve stock for another use. Refrigerate until firm and cold. Cut into desired serving pieces  

Serving Sauce:

1.Combine ginger, soy sauce and onion; toss it; to make a mixture

2. Heat the oil in a pan and pour into the mixture toss; then serve with the chicken

It serves four person.
