Chicken Sweet and Sour: Breaded and with Pineapple

MJPatrick's version of chicken sweet and sour breaded and with pineapple.

This is my version of sweet and sour chicken adopted from chinese cooking. 

Ingredients 

6 pieces chicken fillets, sliced at least 1cm thick 

1 piece green bell pepper, cut, seed and slice in desired shape 

1 piece red bell pepper, cut, seed and slice in desired shape 

Bread crumbs 

1 egg 

½ cup peanut oil (or any cooking oil) 

3 cloves of garlic, peeled and crashed 

1 tin (220g) pineapple slice, cut into desired size 

Onion to garnish 

1 tablespoon soy sauce 

1 teaspoon brown sugar (optional) 

1 bottle (195g) of sweet and sour sauce  

Dash of sesame oil 

Procedure 

1. In a bowl marinate chicken with soy sauce, sesame oil, sugar and egg, leave for 15 minutes.

2. Sprinkle bread crumbs on plate spread the chicken turn over, be sure both sides is coated with the crumbs. 

3. Meanwhile, put cooking oil in pan and heat lower the fire, fry chicken by batch until golden brown. Drain on kitchen paper towel to absorb the oil. 

4. Cut fried chicken into strips at least 2cm wide, set aside. 

5.  On same cleaned pan, dash a bit of oil sauté garlic until fragrant, put in bell pepper sauté for few minutes, add pineapple with juice bring to boil, add sweet and sour sauce stirring constantly until it boils then add chicken toss and cook till the sauce is thickened. 

6. Dish up and serve.

Tips

-You can buy sweet and sour sauce in bottle but if there is no available you can make your own, here is how: 1 cup of catsup, 1 table spoon of white sugar, 1 tablespoon of soy sauce, 1 teaspoon of corn flour. Mix them all together. 

- be sure to lower down the heat before putting in the chicken when frying, the breadcrumbs can burn easily.  

- I recommend Sharwood sweet and sour sauce (this is not an advert)
