Spanish Rice with Bacon

This is a comfort food recipe that adds bacon to the hearty dish!

You've heard the phrase, "Bacon makes everything taste better," Well, I don't usually care for Spanish Rice because of the tomato flavor being too strong, but this Spanish Rice Recipe I got years ago as a young bride has the yummy addition of bacon in it and it really makes the dish special tasting just like the phrase says bacon does. Also, the use of your favorite brand of Spaghetti Sauce instead of tomato sauce will appeal to your kids' tastes and mine too. It is great to double and serve to company too. It makes a hearty easy meal in no time at all. I'm sure your family will enjoy it as much as mine does. Try it tonight and see. You'll be glad you did! A helpful hint is to make sure and Read through all recipes first before you begin so you know what all they entail.

In a large pot, boil 6 C salted water and 3 C long grain white rice until done according to package directions. Set aside. Meanwhile, in a large skillet, brown 1 lb. ground beef, 1 small diced onion, 1/2 of a cleaned out green pepper diced in small pieces, 2-3 long strips of chopped bacon, and 1 t. chili powder. Can add some minced garlic too, if you wish. Drain the fat from the pan and discard.

Stir together the ground beef mixture and the rice. Pour in a jar of your favorite spaghetti sauce. Combine well. Serve hot in the pan.

Add some homemade bread and butter, a tossed green salad, plus a dessert and you have a great meal in no time at all! Good luck and happy cooking!
