One of the most favorable and tasteful summer entrees is the chicken salad; mouth-watering addition to every meal that will satisfy even the most demanding ones. A chicken salad can also be used as a spread to delicious sandwiches. Your kids will love it! Moms like it too as it is healthy containing ingredients full of vitamins. Here are two easy and fast recipes that will make you and your loved ones begging for more.

* Mama’s Chicken Salad

Ingredients:

- 3 cups cooked, diced chicken.

- 2 cups boiled dry fusilli

- 1 cup corn

- ½ cup chopped ham

- ½ cup chopped cheese

- ½ cup finely chopped celery

- 1 cup mayonnaise (or more, it’s up to you)

- 2 teaspoons lemon juice

- pepper and salt to taste

Preparation:

- Mix chicken with the dry fusilli and set aside.

- On a big ball, add the corn, ham, cheese, celery, mayonnaise and lemon juice and whisk well.

- Add the chicken and dry fusilli and blend until all ingredients mix up perfectly together.

- Add more mayonnaise if you want. Be sure that is enough to make your salad moist.

- Keep it in the refrigerator for an hour so as all ingredients bond together. It can also be served as a main course. Serve in a big dish and place aside the vegetables you like with a hint of seasoning blend. Enjoy!

* Tasty Chicken Salad

This is a fantastic recipe for chicken salad that also makes an ideal spread for sandwiches.

Ingredients:

- 3 cups cooked diced chicken

- ½ cup finely chopped celery

- 1 finely chopped purple onion

- ½ cup green peppers

- 3 teaspoons sweet pepper

- 2 teaspoons lemon juice

- black pepper

- salt

- ½ mayonnaise or more

Preparation:

On a big basin, mix chicken with the rest of the ingredients apart from mayonnaise. Stir them gently. Let it rest for half an hour until chicken is marinated with the lemon juice. Add mayonnaise and mix together.

Your salad is now ready to accompany your main dish. Do not neglect to try it in your sandwiches! Just add ham, cheese and your chicken salad. You will be thrilled! Serve it to your family and friends and enjoy the comments! Bon appetite!
