Give Pumpkin bread instead of Pumpkin Pie this Thanksgiving

You might want to be different this thanksgiving and gift a pumpkin bread instead of a pumpkin pie. This date and pumpkin bread can be served like cake with a dap of whipped cream on top or as a breakfast bread with butter.  This recipe makes three mini loaves of pumpkin date bread. If you do not like dates raisins work well too.  The nuts are optional as well.

3 ½ cups of flour

2 teaspoons of baking soda

1 teaspon of cinnamon

1 teaspoon of nutmeg

1 teaspoon of all spice

1 cup of cooking oil

4 eggs

2/3 cup of water

2 cups of canned pumpkin

1 ¼ cup of chopped walnuts

1 cup of dates

Combine all of your dry ingredients in a large bowl and mix well then add your dates and nuts and mix in your wet ingredients. When a coarse batter is formed spoon the batter into three small greased loaf pans and bake for an hour at 350 degrees Fahrenheit. Let cool at least an hour before serving.

 Vanilla Pumpkin Bars

1 3/4 cups of flour

1/2 cup of sugar

1/4 cup of vanilla extract

1 large egg

14 Can of Condensed milk

1 Can of Pumpkin

1 Cup of  chopped Pecans

1/2 cup  of margarine

Combine your flour , sugar,  and vanilla. Cut in your margarine until it blends with the rest of the ingrediants. A one large beaten egg, Slowing mix in your milk, pecans, and pumpkin til you have a coarse batter. Press the mixture onto a well greased 13 x 9 baking pan. Bake at 350 degrees fahrenhiet for 30 minutes, When the center is set remove from oven and cool. You can then cut it into bars.
