Italian Sausage and Potato Soup Recipe

Now that Winter will soon be with us I thought it would be a perfect time so share my recipe with you for delicious Italian Sausage and Potato Soup. I hope you enjoy my soup.

Ingredients for Italian Sausage and Potato Soup:

2 tablespoons of Olive Oil
1 cup of diced onion
2 clove garlic, minced
1 pound of Italian sausage
3 cups of chicken broth
1 cup beef broth
1 cup of vegetable broth
4 small russet potatoes, washed and cut with the skins still on
1 teaspoon of dried basil
1/2 teaspoon of dried oregano
1/4 teaspoon of freshly ground pepper
1/4 teaspoon of salt
1 cup of heavy cream
2 cups of coarsely cut spinach
1/4 cup of freshly grated Parmesan cheese

Directions:

Place the olive oil in a large saucepan and turn the heat to a medium high heat. When the pan is hot add the onion and garlic and then saute until the onion gets soft. At this point add the Italian Sausage and cook until its browned. Try not to break the ground sausage into small pieces. Set the sausage aside and save for later.

In a large pot, over a medium high heat, add the chicken broth, beef broth, vegetable broth, potatoes, basil, oregano, pepper and salt and bring to a boil. When the soup comes to a boil reduce heat and bring to a simmer. Simmer the soup for twenty minutes. At this time add the sausage mixture and continue to cook for another 5 minutes. Now add the cream to the soup and stir it in. Reduce the heat to make sure it does not boil. Cook the soup for an additional 2 minutes.

Next, take the soup off the burner, add the spinach to the pot and then put the top on the pot. Let the pot sit for an additional 3 minutes. This will cook the spinach. Your soup is now ready to serve. Place the soup in bowls and sprinkle a little parmesan cheese on the soup.
