You said "Healthy Fries"?

If you're looking for a healthy way to eat fries, please read on.

You said healthy fries ? Yes, that is exactly what I said. Like most people, I enjoy french fries a little bit too much. So, since I am trying to lose a little weight without being frustrated (very important), I tried this recipe my sister gave me the other day, "butternut squash fries". Now I hear you say, "no way", squash.. yuck.

 NO WAIT, you won't believe how good it tastes once it's cooked. And it's good for your health.

 Here is the recipe for the butternut squash fries  :

 Ingredients:1 butternut squash
                      Salt (either kosher salt or regular salt)

 Directions:
Pre-heat oven to 425 degrees. You might have to lower it to 400 degrees if you notice that the edges of the fries are getting brown before the 40 minutes.

 Peel and remove the seeds of your butternut squash.

 A little hint for you, your butternut squash will be easier to peel and cut if you wash it first, prick the skin with a fork a couple of times and put it in the microwave for about 2 minutes.  That really helps.

 Once it's peeled, slice it in half and remove all the seeds. Then cut it up into french fry shapes (or other shapes if you prefer).  Place on a cookie tray sprayed with olive oil. (Olive oil is also good for your health, but that's another story.)  Cover lightly with salt.  Place tray in your pre-heated oven and bake for about 40 minutes, flipping the fries halfway through baking process. Fries are done when they are starting to brown on the edges.

 Now you can eat your crispy fries without feeling guilty.
