Here is a unique recipe to make a knish casserole.

Some people love a good knish. I first heard about them from a dear YANKEE friend. Apparently, in New York, this is as popular as hot dogs are here, being sold by street vendors in much the same way?

I made a batch of Knish one time for her, and I will include the link at the end. However, this is a bit different, and much easier to make.

My family loved this, and had three helpings! This is a Tennessee take on the Very Yankee, Very Yiddish traditional favorite. I hope you will try it!

Things You'll Need:

  • Flour
  • oil
  • margarine
  • baking soda
  • salt
  • sugar
  • ice water
  • Instant mashed potatoes
  • 2 apples
  • 2 onions
  • worcester sauce
  • garlic flavoring of some sort..I used two little left-over garlic butters that came with the pizza from Papa John's.
  • egg wash (1 egg and 1 tablespoon of water)
  1. Step 1

    When I make a knish of any type, I use my bread machine. I mixed my dough on the dough setting, and I placed a few tablespoons of vegetable oil in the pan and swirled it around first. You could use the mixer or food processor, and it would be the same thing. Add 1/2 stick of margarine, 1 teaspoon of salt, 1 teaspoon of sugar, 4 teaspoons of baking powder, 3 cups of self-rising flour, 1/2-3/4 cup of ice water. Allow to mix with 1/2 cup, and add the rest as needed. You need a very stiff dough.

  2. Step 2

    In a pan, place butter, garlic, (or garlic butter) two large chopped, two apples chopped, 1 tablespoon of worcester sauce, in a little oil. Allow to cook until not quite soft. These ingredients I use to make a knish casserole are not the ones usually used when you make a knish.

  3. Step 3

    Prepare a pot of instant mashed potatoes, however the package suggests. Use the equivalent of 2 1/2 cups of spud flakes dry. I actually find that instant mashed potatoes makes a knish that tastes better than freshly cooked potatoes.

  4. Step 4

    Combine the items in a bowl and stir.

  5. Step 5

    In a greased rectangular baking pan, 11" by 14" , spread half of your dough. Carefully spread it so that the pan is covered. This is still easier than trying to make a knish the traditional way, one at a time.

  6. Step 6

    Spread the potato and cooked ingredients across the dough.

  7. Step 7

    Spread the remaining knish dough across the top, laying it in strips. Remember how you used to play with Play-dough when you were younger? Roll little snakes and then flatten them out.

  8. Step 8

    Mix One large egg with one tablespoon of water and spread across the top until all is used up.

  9. Step 9

    Bake until golden in a 425 degree oven. It took around 30 minute for mine to be done. Check frequently for burning. Slice like a cake. Serve with a spatula.
