Italian Grilled Potato Skins

Italian herbs and spices are some of the best seasonings in the cooking world. Grilled recipes are a hot ticket for summer and winter, keeping the chef out of the kitchen and in the outdoor kitchen dining area with the family. Grill these up as a side dish tonight and enjoy a wonderful Italian grill-flavored potato. Never having been raised in or near an Italian family, but having tasted homemade Italian food a few times, I truly envy Italian families and admire their expertise in the kitchen.

Italian Grilled Potato Skin Ingredients:

  • 6 Medium Baking Potatoes
  • 2 tbsp Olive Oil
  • 1 Clove Garlic, minced
  • 1/4 tsp. Italian Seasoning
  • 1 Jar (14 oz) Pizza Sauce
  • 3 oz. Pepperoni, cut into bite sized pieces
  • 1 1/2 cups Shredded Italian Blend Cheese

Directions:

  1. Microwave potatoes on high 8 minutes, turning once. Cooking time may vary depending on microwave temperatures.
  2. Cut each potato in half lengthwise
  3. Combine olive oil, garlic and Italian seasonings in a bowl
  4. Brush the cut side of each potato halve using half of the olive oil/seasoning mixture
  5. Lightly grease the grill rack and heat grill to medium heat.
  6. Lay potato halves with cut side down on grill rack and cook 5-7 minutes or until tender
  7. Remove from grill and scoop out the insides of each potato halve, leaving 1/2" thick shell
  8. Brush inside of the shell with the remainder of the olive oil/seasoning mixture
  9. Spoon pizza sauce into each shell
  10. Mix the potato you scooped out with the cheese and pepperoni and add to each shell, heaping it up above the top of the potato
  11. Return potato to the grill, with bottom side of potatoes down this time, and grill for about 5 minutes until the cheese melts.

Serve hot. You may serve with a sprig of parsley garnishment on or beside the potatoes. Sour cream with chives also tastes delicious served on top of the potato. This is a very easy recipe to grill up when in a hurry and unexpected guests arrive. Set some extra plates and toss a few more potatoes on the grill. Best of all, clean up is a real breeze.
