Peppers are made from the pepper plant. Different types of peppers are obtained from plants of different families.

Peppers come from the fruit or seeds of a climbing shrub. Black pepper is made by pickling unripe berries and drying them until they turn black. White pepper is made by removing the outer coat before grinding.

True pepper is made from the pepper plant. But a great many other kinds of pepper are obtained from plants of entirely different families.

Pepper is considered to be the most important of all spices in the world. In ancient times, during the middle ages, it was mainly used by nobles and other rich folk. It had to be carried by caravan from the Far East and this made pepper so expensive that a pound of pepper was considered a fitting present for a king.

In some way pepper was like gold. People could pay taxes with pepper and it was given as a tribute to rules. When an army conquered an enemy and soldiers were given a share of the treasures, pepper would be one of the great rewards they would receive. The Portuguese found a way of getting pepper at lower cost by finding a sea route. They found it around the Cape of Good Hope.

For example, there are red peppers or chilies. They belong to the genus Capsicum. There are also Cayenne peppers and Tabaso peppers. Still another kind, Bell peppers, is called pimientos when canned in oil. Pimientos are the Spanish name for the pepper plant. Finally there is paprika. It is a red pepper produced from the bell pepper. When these are ripe, they are red and hot, but are milder than many other kinds. That is why paprika can be used more freely than any other kinds of pepper.
