Making Chocolate candy covered Cherry Mice

These easy to make, cute little mice are a sure hit during the holidays. They don't take many ingredients or alot of time to make and who doesn't love chocolate covered cherries and Hersey's kisses. You can use white chocolate for white Easter candy.

  First what you will need:

  1. Marachino Cherries with stems. These are the ones in jars for topping ice cream. Not pie cherries.
  2. Hersey's kisses. One for each mouse
  3. Almond slivers. One small package
  4. Chocolate coating Almond bark. Some 4 oz. for each 20 mice.
  5. A double boiler
  6. Waxed paper lined, flat sheet pan.

Drain the cherries and place them on a paper towel in the area where you're going to put the mice together. They need to be dry for the chocolate to stick to them. Count them to know how many kisses and almonds you'll need.

Unwrapped the kisses and place them in the work area. Do a few extra for any thieves that are around.

Go through the almond slivers and pick out ones that will make good ears for the mice.

Use the double boiler to melt the chocolate bark. Don't get it too hot and don't get any water in it. Read on the package for tips on melting it. I like to use a double boiler because it can be taken to the work area to keep the chocolate melted without having to go back to the stove. If you get it too hot and it starts to harden just add some shortening to it and it will become smooth again.

At the work area, dip a cherry, holding it by the stem/tail, into the chocolate, rolling to coat. Place it on the wax paper and while the chocolate is still soft stick a kiss on the end opposite from the tail, for the head. Repeat with each of the cherries.

Dip the almond slivers, one at a time, just slightly into the melted chocolate and stick them on the back side of the head for ears.

You are finished unless you want to add eyes which can be made from decorator icing.
