Shrimp Cocktail and Yellow Salsa Recipe

Grilled shrimp and chilled salsa for dipping recipe.

Sometimes you need a pleasant finger food that's easy to whip up when a crowd arrives. Chips and dip just don't do the trick when you are trying to be a bit more impressive. Shrimp is a dish that is rich and filling especially when served with a nice yellow salsa. Here is a yummy shrimp dish that you will absolutely LOVE! Here's what you'll need.

4 yellow tomatoes, no seeds, chopped fine

1 bell pepper, yellow, chopped fine

1 cucumber, peel and chop fine (no seeds)

1 celery stalk, chopped fine

½ red onion, chopped fine

2 TBsp fresh chives, minced

2 TBsp white wine vinegar

2 TBsp lemon juice

1 TBsp Worcestershire sauce

½ tsp. ground pepper

¼ tsp. salt

Hot sauce, to taste

1 lb. raw shrimp, about 25, peel and devein

2 cloves of garlic, mince

2 TBsp thyme, minced

In a large bowl, mix the tomatoes, the pepper, the cucumber, celery, onion, chives, vinegar, lemon juice, Worcestershire, pepper, salt and hot sauce. Cover tightly. Chill in the refrigerator for 20 minutes.

In another bowl, mix the shrimp, garlic and thyme. Cover tightly and refrigerate for 20 minutes.

Coat a pan (grill friendly) with spray oil and heat it over medium heat. Place the shrimp in the pan and cook it until it is pink. It takes about two minutes on each side. Place the salsa mixture in glass bowls and serve it beside the shrimp!
