Light and refreshing Tuna Salad

Here is a recipe for a light and refreshing tuna salad.

This is a light and delicious salad. If you aren't in the mood to cook a heavy meal or you don't have alot of time this is a perfect dish! Not only is it fresh and light but very inexpensive as well.

Things You'll Need:
  • 6 cans of tuna
  • 1 head of lettuce
  • 2 large or 4 small pickles
  • 1/2 red onion
  • 1 tomato
  • 3 eggs
  • 6 to 8 tbsp. mayonnaise
  • 1 box saltine crackers
  • Hard boil your eggs. To do this simply place your eggs in a pot of cold water. Bring water to a rolling boil. Take off of heat and cool with cold water running over eggs(ice cubes will work also). Once cooled peel and dice into small pieces and place in large mixing bowl.
  • While your eggs are cooking or cooling you can prepare your vegetables. Wash them all and dice. Add them to the mixing bowl.
  • Add tuna and mayo. Remember you can use tuna in water for a healthier meal.
  • Stir mixture together until all the veggies and tuna and eggs are covered with the mayo. Place bowl in refrigerator to cool for 30 minutes to 1 hour.
  • Enjoy your salad on top of saltine crackers. The textures and flavors go well together.
