Cheesy Pineapple Dessert

What sounds like an odd combination is really a tasty dessert!

When I first heard of this dessert, I thought people were crazy for putting them together.  After tasting it, it is now a holiday or get-together staple at our house!  Don't let the name throw  you off because these ingredients together make for a surprise dessert treat!

You will need:

One twenty ounce can of Crushed Pineapple

Three Tablespoons of All Purpose Flour

One half of a cup (eight tablespoons) of Melted Butter

One cup of Sugar

One Cup of Finely Shredded Cheddar Cheese (make sure it is the finely shredded style)

One Sleeve of Crushed Ritz Crackers (and yes, the Ritz taste the best on this)

Preheat your oven to 350 degrees.  Lightly grease an eight by eight (8x8) or a nine by nine (9x9) baking dish with a non-stick cooking spray.  Drain the twenty ounce can of crushed pineapple and reserve all of the liquid.  Make sure that you drain it well.  Mis the sugar and the flour in with the pineapple juice and whisk it until smooth.  Place the drained pineapple in to the lightly greased casserole / baking dish.  Pour the liquid / sugar mixure over the pineapple.  Sprinkle with the finely shredded cheddar cheese.

In a separate bowl, mix the crushed Ritz crackers and the melted butter.  Coat the crackers well so that all of the butter is absorbed.  Once coated, spoon it over the cheese layer in your casserole / baking dish and make sure all of the cheese is covered.  Place dish in the oven and bake at 350 for thirty-thirty five minutes.  The topping should be golden brown.  Serve immediately.

For fun, try and not tell anyone the ingredients and let them taste this first - sometimes people hear the name and automatically won't try it.  They'll be glad, though, that they did!
