Recession Potato Soup

This is a great soup that's extremly economical and stomach filling. Great for those of us on a tight budget. This delicious soup is also an excellent choice for those on a milk-free diet.

   It seems that a lot of us are on a more strict budget these days and searching for ways to stretch that dollar. This is a recipe for hearty and easy potato soup made with only a few ingredients that is delicious , stomach filling and economical.
This soup is also great for those who can't tolerate milk products or those on a milk-free diet. Just follow the recipe below, serve  with Texas toast, french bread or toasted soy bread. You can add a tossed green salad and my Southern style sweet tea ( link below) to make a well rounded inexpensive meal.

4-5 medium potatoes

1/2 large onion or 1 whole small onion

1/4 stick of butter or margarine

1 teaspoon salt

1/4 teaspoon pepper

4 tablespoon corn starch

1 teaspoon dried parsley flakes(optional

1. Wash , peel and dice potatoes and onion

2. Put onions in pot, add salt,pepper,butter and water. Make sure water is filled to about 3" above potatoes and onions.

3. Place on high and cook until this comes to a boil ,reduce heat to medium and cook for 10 minutes.

4 . Add diced potatoes, continue to cook until potatoes are tender but still firm.

5. Mix corn starch with 1/4 cup of water, stir til dissolved and slowly pour into boiling soup mixture , stirring constantly fo 30 - 60 seconds or until mixture thickens. REMOVE from HEAT.

6. Fill soup bowls and sprinkle with a pinch of dried parsley flakes ,or 1 sprig of fresh parsley ,if desired.
