How to Make A Great Meatloaf

Learn how to make Great Meatloaf in this traditional yet modern recipe.

Making meatloaf is easy but making a Great meatloaf can be challenging. The words bland, dryed & boring have sometimes been used to describe meatloaf. We all want a dish we can be proud of. Not one people dread. With this meatloaf you wont have that problem. Before the first plate is done you'll have them wanting seconds. So let's get started.

Section 1 Veggies - Dice 1 green/red bell pepper & 1 white onion. Once complete put aside. Quick note: you may chose to add other veggies to your meatloaf such as carrots, potatoes, mushrooms or whatever you chose. However be sure to dice them so that they cook properly. Some veggies if to large will not cook properly & may still be hard. For the sake of this particular dish we are only using bell peppers green or red & onions.

Section 2 Meat - Next place ground meat into large cake bowl & pour in 2/3 bottle of Worcestershire Sauce, All the diced bell peppers & onions. (as well as any other veggies you want to put in).Once the ingredients have been placed in, Manually massage & mix in together with the meat & form into a big ball. When the ball is complete take 1/2 cup Worcestershire sauce, 1/4 cup of milk & 1 egg and mix into a small bowl. Next glaze mixture (with cooking brush or manually)onto meatloaf covering completely.

Section 3 Crust - Next using Second bowl pour in two cups of flour & the remaining Seasoned bread crumbs. Mix the seasoned bread crumbs & flour together. Then remove meat from first bowl & place into second bowl that contains the flour & crumbs. Next powder meatloaf ball on every side by lifting & placing into bowl on each side until the ball is completely covered. Repeat process a few times for an even coat.

Section 4 Cooking - Place meatloaf ball into Cake pan. Press ball down & flattening to spread out into pan. Once complete the meatloaf should almost be the size & shape of the cake pan. Make sure you leave at least a 1 to 2 inch gap between the meatloaf & pan edge (to allow water & fat to drain & not overflow). Next with your spatula insert vertical. slits into meat starting from one end to the other (long ways). Make slits deep into the loaf but do NOT cut it into pieces or in half. This is done to insure proper cooking as well as to speed up cooking. They serve as vents since meatloaf is thick. When all steps are complete place into oven. Cooking should be at 40 to 45 minutes per 1 pound at 350 degree.

Section 5 The Sauce - While meatloaf is cooking pour in all cans of tomato sauce into small pot. Pour in about 1/4 cup Worcestershire sauce & let simmer for about 15 to 20 minutes. Next add Brown Sugar. Now add enough brown sugar until the sauce is more sweet than tangy. Next 2/3 the way through the meat loafs cooking remove from oven & "safely" drain the accumulated fat. Next pour Sauce over meatloaf & place back into over for the remaining cooking time.

Section 6 Serving - Remove meatloaf from oven & serve with your selected sides. In our home we serve with Mash potatoes & white gravy, Corn & Sweet Southern Cornbread. Enjoy!
