How to Make Lime Tequila Chicken With Sauce

Lime Tequila chicken is a Mexican dish that can be grilled or oven-baked. Add more peppers or chili powder to the sauce for extra hotness. This is for 2 servings. Add, accordingly to this recipe, for a larger gathering. Use a good quality golden Tequila and serve with white and red gazpacho and Margaritas.

Things You'll Need:
  • 3 skin on chicken breasts or 6 chicken thighs
  • MARINADE:
  • 1 c. lime juice
  • 1/2 c. Tequila
  • 2 minced garlic cloves
  • 2 Tbsp. diced cilantro
  • 2 Tbsp. diced jalapeno peppers
  • 1/2 Tbsp. chili powder
  • 1/2 Tbsp. lime zest
  • salt and pepper
  • SAUCE:
  • Marinade
  • 2 Tbsp sugar
  • 1 tsp. cornstarch
  • sliced lime
  • Large resealable bag
  • Cooking tray for baking or charcoal grill
  1. Step 1

    Blend marinade ingredients in a large resealable bag, add chicken, seal well. Refrigerate for 3 to 12 hours, shake up, occasionally. Optional: Make larger quantity and set aside for use in sauce

  2. Step 2

    Prepare charcoal one hour before grilling or preheat oven to 350 degrees. Bake for 45 minutes or grill until golden brown. Internal temperature should reach 170 degrees (77c).

  3. Step 3

    Prepare sauce: While chicken is grilling or baking. Add marinade, sugar and cornstarch to saucepan. Cook over medium low heat, stir slowly until it comes to a rolling boil and starts to thicken to a syrupy consistency. Carefully, taste test and add any needed condiments for flavor and heat

  4. Step 4

    Arrange finished chicken on platter with lime slices and cilantro leaves as garnish. Drizzle sauce over chicken, have one or two decorative dishes with extra sauce for dipping.
