You can make a great bread pudding in the bread machine or breadmaker. It's very different, and great as a dessert or breakfast, hot or cold.

This is a fun recipe for bread pudding.  If you have a bread machine or breadmaker, you can make this bread pudding.  If you don't have a bread machine, you can get one cheaply and easily at a thrift store or Goodwill Store.  People get them as gifts,  never really learn to use them, and then donate them to charity.  So, you can get one for a few bucks!

Most bread puddings have a consistency that still  has the texture of  torn pieces of bread.  You can achieve that texture if you just use a bake setting or a cake setting that doesn't mix the batter.  I used a cake setting that actually does mix the dough, and the resulting consistency is quite nice and elegant.  It has the congealed feel and look of traditional english pudding, and yet you can slice it.

Ingredients:

A Few Tablespoons of oil for pan

8 cups bread

3 cups milk

4 eggs, beaten with a fork.  2 cups sugar 1 tbs cinnamon 1 stick margarine splash of vanilla -------------------------------------------------------------- Directions:

Place oil in bottom of the pan.  Add Torn bread.  I used a previously baked loaf from the bread machine.  You could just really use any bread.  Often there are nice loaves of bread in the day old rack from the deli bakery of your grocery store.

Add Sugar and cinnamon, tossing the dry ingredients.  Add milk  vanilla, and eggs.  Quarter the butter or margarine, and add one piece to each corner.

Use the Cake setting; it could be one that mixes or one that doesn't.  I have two breadmakers.  One has a cake setting that just bakes.  One has a cake setting that mixes and bakes and also has a  bake setting that only  bakes.  To get a smooth, plum pudding consistency, you will want it to mix in the bread machine.   If your bread machine or breadmaker does not have a cake setting, just use a bread setting.

When it stops mixing and starts to bake, sprinkle a little cinnamon and sugar on the top.

Remove, allow to cool, and then turn over on a plate, as you usually do with your bread machine.  Slice and serve.
